Aside from keeping your staff and customers cool and comfortable, there’s much more to air conditioning and ventilation within a commercial kitchen then just temperature. What many restaurants’ owners may – or may not know, is the air pollution that restaurants contribute towards.
A 2019 article reported by The Guardian, described how commercial cooking was contributing to around 13% of particle pollution in London alone and that many of these emissions are mostly ignored in regards to the wider conversation, however there are small changes you can make in your commercial kitchen that not only benefit your indoor space but the planet too.
The pollution issue can also go hand-in-hand with ventilation, which has never been more important due to Covid-19. Tackling the issue of keeping your restaurant safe indoors can be supported by professionally installed air conditioning and ventilation which will help to deter odours, dust and air particles when it’s time to re-open.
It’s a legal requirement for employers to provide adequate and suitable ventilation in an enclosed workplace. Ventilation can be achieved by several methods such as opening windows and doors to allow fresh air to pass through your premises or by installing air conditioning units, fans or ducts which brings fresh air in from outside.
For official information on ventilation and air conditioning during coronavirus, we recommend viewing the advice provided by HSE.gov.uk.
There are several types of air conditioning units that can be used effectively in both small and large spaces. You’ll find most restaurants tend to go for wall-mounted air conditioners as they both save space and provide the necessary ventilation that can be controlled to provide a suitable temperature to customers and employees.
Multiple units are often used for larger restaurants which are evenly spaced around the dining area to encourage a consistent flow of fresh air. For smaller restaurants, have one main unit that’s placed centrally or have a couple evenly spaced can produce the same effective ventilation required.
This type of air conditioning unit is commonly used for offices and retail spaces as the air supply is blown out of all four directions and eliminates having to place units on valuable wall space.
Floor and ceiling mounted units are commonly found low to the wall and are perfect for restaurants or commercial areas with little wall space as they can sit neatly out of the way against the wall.
Ducted systems are another type of ceiling air conditioning unit and apart from having a stylish exterior, they also offer the greatest coverage for heating and cooling.

We were called out to take a look at a very old air conditioning system in a restaurant in Chesterfield. The system hadn’t worked for years and the owner wanted advise on the best course of action. The previous year had faced them with several bad reviews from customers due to the uncomfortable temperatures in the restaurant during summer and they didn’t want a repeat again this year.
The system was low on pressure & on R22 (a banned gas) not only this but the unit had several other faulty components. We proposed to replace the system with a new Midea system that would not only be a higher power but also much more efficient than the last, giving better performance and lower bills!

To keep disruption to a minimum the installation was carried out “out of hours” – this meant that there was no loss of trading for the restaurant.
After decommissioning the old system, we had to cut out the ceiling back of house and remove the ducted unit from inside the void. In its place we then fitted the new indoor unit and altered the pipe work and ducting to suit.
The old condensing unit was very large and required a genie lift to remove it and then install the new one. After commissioning we re-boarded the ceiling and had it professionally plastered.
The new system was up and running within a few days, giving the restaurant heating and cooling for year round comfort, alongside our 5 year warranty for peace of mind for our client.
If you’ve noticed your restaurant would benefit from an air conditioning system to provide cleaner air and a better ventilated kitchen and dining area, our engineers are on hand to provide you with information and guidance on the most suitable air conditioning units.
